2 cups chopped fresh mangos (about 2 large)
2 cups chopped fresh tomatoes drained
juice of 2 limes
8 green onions chopped
1 jalapeno seeded and chopped fine
1 bunch cilantro leaves chopped
1/2 tsp. salt or to taste
Directions: toss all ingredients together refrigerate for 2 hours for flavors to blend.

Cilantro Lime Rice – 2 cups uncooked brown rice, 4 cups water, 3 tsp. chicken bouillon granules, 2 Tbsp. butter, 1/2 bunch chopped cilantro leaves, juice of 1 lime, add to rice cooker and cook 45 minutes or according to directions with your rice cooker. When finished cooking stir in 1 drop cilantro & 1 drop lime essential oil, fluff with fork.
